Note that whole grains are best leavened with a sourdough which means that whole grain dough is usually acidic; it is
therefore important to provide accessories such as mixers with contact surfaces compatible with the acidic dough e.g stainless
steel, food grade plastics, unglazed ceramics, porcelain and wood are compatible.
